The Twelve Days of Christmas: Day 2
This recipe was always my favorite growing up. Not as sophisticated as the Red Velvet Cake, but just as good. This is a fun cookie to make with little kids - I have great memories of making these with my mom when I was younger.
Now, these cookies are still one of my favorites, but for different reasons. Buttery, not too sweet and a hint of mint make these the perfect cookie to eat with a big mug of hot chocolate (recipe coming tomorrow).
- 1/2 c. shortening
- 1/2 c. butter
- 1 c. powder sugar
- 1 egg
- 1 1/2 t. almond extract
- 1 t. vanilla
- 2 1/2 c. flour
- 1 t. salt
- 1 1/2 t. red food coloring
- 1 1/2 c. crushed peppermint candy
- 1/2 c. sugar
Mix sugar and peppermint candy and set aside. Mix shortening, butter, powder sugar, egg, almond extract and vanilla thoroughly. Add salt and flour. Divide dough in half, put food coloring into one half. Roll a four inch strip from each color, place strips side-by-side and press lightly together and twist like a rope. Place on un-greased cookie sheet and curve the top to form the handle of a candy cane.
Bake @375 for about nine minutes, until lightly browned. While warm, sprinkle with sugar and peppermint candy mixture.
