Winter: potatoes, parmigiano, and rosemary. Or tomatoes, mushrooms, mozzarella, and parmigiano.

Summer: Mozzarella and squash blossoms, if you can find them. Otherwise, tomato, mozzarella, and parmigiano.

In Italy, not here: prosciutto and maybe an egg.

Never: Pineapple (misplaced). Those weird slices of peperoni that bead up with grease in the oven (unsightly, stimultes gag response).

Any combination of pepperoni, sausage, green peppers, olives, onions, basil leaves, tomatoes, mushrooms (and recently introduced to me by some Southsiders--even some giardiniera)...

Anchovies, as a personal preference, hell no...

Meanwhile, the pizza snob in me screams that pineapple, chicken and any other such novelties have no place on a Chicago pie...

Probably easier to say what I DON'T want:

Anchovies. Pineapple. Potatoes. Some sort of fish.

Other than that, anything goes.

Side note No. 1: I used to love The Art of Pizza's "Meaty Delight (which sounds sort of risque), but it's gone downhill recently.

Side note No. 2: My new favorite pizza place is Apart Pizza which recently opened a new branch near me at Broadway and Bryn Mawr. Their pizza list kicks much ass...

i'm not picky. i like lots of stuff on my pizza. during the summer i like margherita pizza; maybe something more filling during the winter.

i'm trying to think of the weirdest pizza topping ever. but i can't think of any.

one time i made a bbq chicken pizza with a light bbq sauce, chicken, mozzarella, red onions, asparagus. the key is not to overcrowd it with toppings, no matter how much you want to!

I'm partial to the way they do the "Fiorentio" at Coalfire:

"mozzarella topped with tomato sauce, layered with hot calabrese salami & roasted red peppers," it is served on a perfectly-balanced crisp/chewy crust after having been baked in an 800 degree coalfire oven.

Toppings added in this order:
Tomato Puree, mozzarella cheese, extra hot calabrese salami sliced as thinly as possible (this stops the pizza from being greasy), capsicum, onion, garlic, oregano.
