Grown-up Ginger Lime Pops

I need not even mention that the heat is the impetus behind my attempts to cool off in a way that doesn't involve jumping in Lake Michigan. With some limes leftover from a bulk buy (the 20 for $1 deal found in Mexican groceries all over town) and some fresh ginger, I finally put to use that cute little popsicle mold I bought at Target weeks ago. Here's the recipe:

Combine in a blender until well-mixed:

Juice of 6 or 7 limes
1-1 1/2 inch minced fresh ginger
1/2 cup sugar
2-3 cups water
(You can use more or less sugar and water depending on your taste for tartness.)

Pour into a plastic popsicle maker and freeze. Chill the left over mix and pour over ice with some tequila later on. I suppose that's the "grown-up" part about this recipe.
