The Twelve Days of Christmas: Day 10
Fattigmann is another Norwegian recipe and translates to "Poor Man's Cakes." A little time consuming, the dough deep fried and coated with powder sugar. These addictive cookies are a favorite in my family!
Fattigman
- 3 egg yolks
- 1 whole egg
- 1/2 t. salt
- 1/4 c. powder sugar
- 1 t. vanilla
- 1 c. flour
- Oil
With mixer, beat egg yolks and egg until stuff. Add sugar, flour and vanilla and mix - batter will be thick. Place on floured surface and knead dough until blistered (about seven minutes). Roll out very thin and cut with knife into diamond shapes, slit in center and twist two corners through slit.
Heat oil in large kettle on medium heat. Fly lightly until browned on both sides (turn cookies to cook on both sides). Put powder sugar in brown paper lunch bag; drain cookie and shake in bag to coat with powder sugar.
